Ghost Pepper Pinwheels

1. In small mixing bowl beat cream cheese, sour cream, Bigfat’s 8o8, garlic powder, green onions and strawberries (optional).

2. Spread about 1/2 cup of mixture on each tortilla. Roll up like a jellyroll, cover tightly in plastic wrap.

3. Refrigerate for 2 hrs. or overnight. Slice into 1 inch pieces and place on serving tray. Makes approx. 5 dozen.

8o8 Fried Chicken Wings



1. Heat oil in a deep fryer to 375 degrees F (190 degrees C). The oil should be just enough to cover wings entirely, an inch or so deep.

2. Combine the butter and Bigfat’s 8o8 hot sauce, in a small saucepan over low heat. Stir together and heat until butter is melted and mixture is well blended. Remove from heat and reserve for serving. You can also do this in the microwave in a microwave safe dish melting 5-10 seconds at a time.

3. In a small bowl mix together the flour, paprika, cayenne pepper and salt. Place chicken wings in a large nonporous glass dish or bowl and sprinkle flour mixture over them until they are evenly coated. Cover dish or bowl and refrigerate for 60 to 90 minutes.

4. Fry coated wings in hot oil for 10 to 15 minutes, or until parts of wings begin to turn brown. Remove from heat, place wings in serving bowl, add hot sauce mixture and stir together. (If you prefer put wings in a zip lock bag then add the sauce mixture and close it. Then rub the sauce onto the chicken until it is well coated. Be careful, it will be a bit hot. Open and pour onto a plate.) Serve.

This recipe also works well using Bigfat's 3o8 Garlic Ginger Hot Sauce.


Burnin' Baked Wings

Here is a healthier alternative to frying chicken wings.

Prep Time: 15 mins

Total Time: 45 mins

1. Fill a large pot half way with water and then add the wings and salt.

2. Bring water, salt and wings to a boil and then boil for 15 minutes.

3. Empty the wings and water into a collander in the sink. Now lay out paper towels on counter. Pour wings out onto paper towels and carefully (the wings will be hot) pat the wings dry to remove as much moisture as you can.

4. Transfer wings to an oven safe container coated with cooking spray. Bake wings on "Broil" (high) for 15 minutes on each side.(For crispier wings, cook longer on each side, maybe 20 minutes per side).

5. While waiting for wings, combine the 8o8 Hot Sauce and Margarine in a microwave safe container and cook in microwave for 10 to 20 seconds at a time or until melted.

6. When wings are done, toss with the sauce and enjoy!

This recipe also works well using Bigfat's 3o8 Garlic Ginger Hot Sauce.


8o8 Spinach and Chickpea Stew

In a large sauce pan, add diced tomatoes, chickpeas, garlic, onion, coconut, and Bigfat’s 8o8 hot sauce. Cover, bring to a boil and cook over medium heat for 5 minutes. Add the half and half (or cream) stir ingredients well. Add the spinach and simmer on low for 2 to 3 minutes, just until the spinach is bright green. Serve and garnish with cilantro. Great served over cooked basmati rice, naan or Quinoa. Serves 4.


Bigfat Tuna Wrap

Drain off water from tuna and add both cans into a medium size bowl. Add Miracle Whip, dill relish, red peppers and 8o8 Hot Sauce to the tuna and mix well. Add salt and pepper to taste. When mixed thoroughly spoon out some of the mixture onto a tortilla and cover with lettuce, cucumber and cheese. Makes 4 wraps.

This recipe also works well using Bigfat's 3o8 Garlic Ginger Hot Sauce.


Bigfat's Blazin' Brownies (yes, I said brownies!)

1. Use a store bought box of brownie mix, whatever you prefer. Follow the directions on the box. When the brownie mix is stirred and smooth, add 1/2 Tablespoon of the 8o8 hot sauce. Start with one half Tablespoon and see if the heat is where you want it. Remember, sometimes the heat comes slowly so give it about 30 seconds.

2. When the brownies are done baking, take them out of the oven and let cool.

3. Take the container of frosting and add 1/2 to 1 Tablespoon of the 8o8 hot sauce and stir it in for a little extra kick. Spread the frosting evenly over the surface of the brownies. Cut and serve.


Holy Guacamole!

You can do this recipe one of two ways.
1. Buy premade guacamole. (The easy way)
2. Make it from the recipe below. (The other way)

1. Cut, pit and spoon out the avocados into a large mixing bowl.

2. Dice the tomato into 1/4 inch cubes and add to bowl.

3. Dice the onion finely, 1/4 inch or less and add to bowl.

4. Squeeze fresh lime juice into bowl with other ingredients.

5. Add salt and pepper

6. Stir until creamy with a spoon

7. Add 1/2 to 1 teaspoon of Bigfat's 8o8 Hot Sauce and mix again. Taste and wait a minute to see if it's the right heat for you. Add the second teaspoon if needed.

8. Add cilantro and stir it in thouroughly.

9. Serve with tortilla chips, add to nachos, tacos, burittos or sandwiches.


Baked Fire Skins

Prep Time: 15 mins

Total Time: 33 mins

1. Cut potatoes in half lengthwise; scoop out pulp and discard (or save for another use) leaving 1/4-inch in shell.

2. Place on a greased baking sheet.

3. Combine oil, Parmesan cheese, salt, garlic powder, paprika and pepper and brush all over potato skins inside and out.

4. Bake at 475° for about 8 minutes and turn over.

5. Bake for another 8 minutes or so and then turn right side up.

6. Sprinkle bacon and cheddar evenly inside of skins.

7. Bake 2 minutes longer or until cheese is melted.

8. In medium size bowl mix together Bigfat's 8o8 hot sauce with sour cream.

9.Top with sour cream and onions and get to it!

This recipe also works well using Bigfat's 1o8 Habanero Hot Sauce.


Kickin' Taco Dip

Prep Time: 20 mins

Total Time: 20 mins

1. In a large serving bowl, spread the refried beans.

2. Cut, pit, spoon out and mash the avocados.

3. Mix together the fresh lemon juice and garlic salt.

4. Mix with the mashed avocados to combine well, and spread over/on top the beans.

5. In a bowl, combine the sour cream, mayonnaise and 1-2 teaspoons of Bigfat's 8o8 hot sauce. (use more sauce if you want it spicier)

6. Sprinkle with green onions, chopped tomatoes, olives and cheddar cheese.

7. Serve with tortilla and/or corn chips.


This recipe also works well using Bigfat's 1o8 Habanero Hot Sauce.


Fiery Brussel Sprouts

Prep Time: 10 mins

Total Time: 20 mins

1. Put oil in large skillet with a lid over medium heat. When hot, add mustard seeds and Bigfat's 8o8, stir about 30 seconds.

2. Add brussel sprouts, cut side down along with a pinch of salt and liberal sprinkling of pepper. Cook undisturbed 5 minutes.

3. Stir, then add coconut milk and 1/4 cup water. Bring to gentle boil, cover and cook until brussel sprouts are tender, about 10 min. Taste and adjust seasonings, garnish with fresh cilantro & enjoy!!!
