Chipotle Potato Salad

  • 16 new potatoes, about 3 to 4 pounds, cooked, drained and sliced 1/2-inch thick
  • 1 1/2 cups prepared mayonnaise
  • 1/4 cup Dijon mustard
  • 2 Tbsp fresh lime juice
  • 2 Tbsp Bigfat’s 508 chipotle (more or less to taste)
  • 1 large ripe tomato, seeded and diced
  • 1/4 cup chopped cilantro leaves
  • 3 scallions, chopped, white and green parts
  • 1 medium red onion, thinly sliced
  • 4 cloves garlic, finely chopped
  • Salt and freshly ground black pepper

Prep time: 20 minutes

Cook time: 15 minutes

Total time: 35 minutes

1. Combine all the ingredients, except the potatoes, in a large bowl and season with salt and pepper, to taste.

2. Place warm potatoes in a large bowl and pour the mixture over potatoes and mix well.

3. Season again with salt and pepper and Bigfat’s 5o8 chipotle hot sauce, to taste.

4. Can serve imediately or chill in refrigerator overnight. Serves 8.


Bigfat's Smokin' Poppers

  • 5 oz ground pork sausage (or soy alternative)
  • 5 oz large fresh jalapeno peppers, halved lengthwise and seeded
  • 1/3 (8 ounce) package cream cheese, softened
  • 1/2 cup shredded Parmesan cheese (reserve about 4 Tbs to top popper with)
  • 2 Tbs. Bigfat’s 508 Chipotle hot sauce (more or less to suit your taste)

Prep Time: 25 minutes

Cook time: 20 minutes

Total Time: 45 minutes

1. Preheat oven to 425 degrees F (220 degrees C).

2. Place sausage in a skillet over medium heat, and cook until evenly brown. Drain grease.

3. In a bowl, mix the sausage, cream cheese, and Parmesan cheese, Bigfat’s 5o8 Chipotle hot sauce. Spoon about 1 tablespoon sausage mixture into each jalapeno half. Arrange stuffed halves in baking dish. Top with reserved parmesan cheese.

4. Bake 15 minutes in the preheated oven, until bubbly and lightly browned. Set on broil for 5 min for extra bubbly brown cheese. Serve immediately.

*Note: Poppers can be made, assembled then refrigerated until ready to bake.


5o8 Chipotle Chicken Wings

  • 10 chicken wings (already cut and sectioned)
  • Vegetable or corn oil for deep frying
  • 1/4 cup butter or margerine. We like Brummel & Brown Vegetable Oil and Yogurt Spread
  • 1-2 Tablespoon Bigfat’s 5o8 chipotle hot sauce
  • 1/4 teaspoon salt


  • 1/2 cup all-purpose flour
  • 1/4 teaspoon paprika
  • 1/4 teaspoon cayenne pepper
  • (These wings are also great without the breading if you prefer)

1. Heat oil in a deep fryer to 375 degrees F (190 degrees C). The oil should be just enough to cover wings entirely, an inch or so deep.

2. Combine the butter and Bigfat’s 5o8 hot sauce, in a small saucepan over low heat. Stir together and heat until butter is melted and mixture is well blended. Remove from heat and reserve for serving. You can also do this in the microwave in a microwave safe dish melting 5-10 seconds at a time.

3. In a small bowl mix together the flour, paprika, cayenne pepper and salt. Place chicken wings in a large nonporous glass dish or bowl and sprinkle flour mixture over them until they are evenly coated. Cover dish or bowl and refrigerate for 60 to 90 minutes.

4. Fry coated wings in hot oil for 10 to 15 minutes, or until parts of wings begin to turn brown. Remove from heat, place wings in serving bowl, add hot sauce mixture and stir together. (If you prefer put wings in a zip lock bag then add the sauce mixture and close it. Then rub the sauce onto the chicken until it is well coated. Be careful, it will be a bit hot. Open and pour onto a plate.) Serve.

This recipe also works well using Bigfat's 8o8 Naga Jolokia Hot Sauce.


Burnin' Baked Wings

Here is a healthier alternative to frying chicken wings.

  • 10 chicken wings (already cut and sectioned)
  • 1 Tablespoon salt
  • 1-2 Tablespoons Bigfat’s 5o8 Chipotle Style Hot Sauce (more or less depending on how spicy)
  • 3 Tablespoons margarine (I prefer Brummel & Brown Vegetable Oil and Yogurt Spread. You can't tell the difference and it's much less fat.)

Prep Time: 15 mins

Total Time: 45 mins

1. Fill a large pot half way with water and then add the wings and salt.

2. Bring water, salt and wings to a boil and then boil for 15 minutes.

3. Transfer wings to an oven safe container coated with cooking spray. Bake wings on "Broil" (high) for 15 minutes on each side.(For crispier wings, cook longer on each side, maybe 20 minutes per side).

4. While waiting for wings, combine the 5o8 Chipotle Hot Sauce and Margarine in a microwave safe container and cook in microwave for 10 to 20 seconds at a time or until melted.

5. When wings are done, toss with the sauce and enjoy!

This recipe also works well using Bigfat's 8o8 Naga Jolokia Hot Sauce.


Smokin' Sirloin Kabobs


  • 1 lb sirloin, cubed
  • 1 Green pepper, quartered and halved
  • 1 Yellow pepper, quartered and halved
  • 1 Yellow sweet onion, quartered and halved
  • 2-3 Tablespoons Bigfat's 5o8 Chipolte Hot Sauce
  • 2 Tablespoons Brummel and Brown Spread
  • Sea Salt
  • Fresh black pepper
  • Kabob skewers

Prep Time: 15 mins

Cooking Time: 15-20 mins

Total time: 30-35 mins

1. If using wood skewers, soak them in water to so they won't catch on fire on the grill.

2. Alternate peppers, onion, and beef on kabob skewer, set aside.

3. Melt brummel in a small bowl in the microwave, about 15-20 seconds. Add 5o8 sauce, use more or less depending on how much heat you want.

4. Baste sauce over the kabobs, make sure to get all sides. Any excess sauce in the bowl pour over the kabobs.

5. Season with sea salt and pepper to taste.

6. Let sit in the refrigerator until ready to grill.

7. We noticed that the longer it sits the more it soaks in and gives the meat and veggies a great kick.

8. Grill when ready, cooking 10-15 minutes, until desired wellness is reached on the meat. Baste the kabobs as they cook with the remaining excess sauce. Serve.

Chipotle Smoked Wings

  • 2 pounds of sectioned chicken wings
  • ½ cup honey
  • 1-3 ounces of Bigfat’s 5o8 Chipolte Hot Sauce (start with one ounce to taste. You can do more if you prefer)
  • ¼ cup butter, melted
  • ¼ cup lime juice
  • 1 teaspoon salt

Prep Time: 15 mins (if wings are sectioned)

Prep Time: 30 mins (if wings are not sectioned)

Cook Time: 2-3 hours

1. Combine hot sauce, honey, butter and 1 teaspoon of salt in a bowl.

2. Place chicken wings into a Ziploc bag along with the wing sauce.

3. Marinate for 4 hours or overnight.

4. Romove wings from plastic bag and place them in the smoker. Cook at 250-300 degrees until done, about 2-3 hours. Check the heat every hour and add wood/charcoal as needed to maintain temperature.

Optional: If you want more intense smokey flavor and heat use Bigfat's 5o8 chipotle as a dipping sauce for your chicken.
